Flash Back Thursday - Hawaii 2014

On May 28th 2014, my boyfriend and I went to Honolulu and Maui, Hawaii. It was one of the best trips of my life and it's hard to believe it's already been exactly a year since we went.



Here we are at the Los Angeles Airport...waiting for take off! I had been to the Big Island the year before and was excited to get to go again. Hawaii is my most favorite place on Earth.

 We landed in the Honolulu Airport. I will tell you, the air is so different from California air. I don't know how to explain it.

The most delicious drinks you will ever have



The breakfasts were UNBELIEVABLE!



 I think I had the best coconut shrimp I've ever had in my life!


We went to this little whole in the wall place called 49ers...incredible food!


We went to the Dole Plantation and got their Pineapple Whip!


And had some lunch there....I got their chicken teriyaki. So good.

Went back to Tiki Joe's because I had to have more coconut shrimp!


Now we are in Maui


Lunch at Cheeseburger in Paradise. Yes it was heaven!

Got this delicious frozen chocolate covered pineapple bar from a road side stand.

 Hawaiian ice. Too much sugar for me. Gave me some nasty stomach issues.

Hated to say goodbye to this beautiful place. I'm still missing it everyday.

Beets done TWO ways - Vegetarian Style



First, I roasted golden and red beets. Then I made a Greek yogurt sauce to drizzle over them.


Then I  made a gluten free sandwich with Persian cucumbers, tomatoes, golden beets, and avocado


Delicious.

Lunch at AD Thai



Went to lunch at AD Thai in Irvine, CA. I ordered the beef satay. Usually beef satay comes on a stick, right? This dish did not. Also, the meat was very salty and they had poor service. I do not recommend.

Dinner at Tutto Fresco



Dinner at Tutu Fresco. I ordered the Gluten Free Pasta with meat sauce. Yum!

Buffalo Chicken Stuffed Bell Peppers w/ Curry Zucchini








First, I add shredded chicken, red onion, buffalo hot sauce and my secret ingredient: organic onion and chive cream cheese



I like orange and yellow bell peppers the best. Green is yuck to me.

I roast them in the oven at 375 F. for about 35-40 minutes.


They come out like this.


For the curry zucchini, I used Mexican squash


Added some coconut cream




Then some yellow curry powder


And tomatoes.


YUM!
