Turkey Meatball Club
Turkey Meatball Club: I used ground turkey meat and wrapped the meatballs in my bacon. My sauce is a red pepper sauce consisting of non-soy veganaise, roasted red peppers and garlic. I made this into a low carb salad by using arugula, tomatoes and avocado.

Roasted Red Pepper and Goat Cheese Fettuccine Alfredo: Went to visit a dear friend that had major surgery a couple weeks ago. Wanted to cooking her something since she only has use of one arm. This dish I used herbed goat cheese, roasted red peppers, garlic, fresh basil and parm cheese and organic heavy cream.

Friend night!
We went to dinner at our friend Nick and Melissa's house last night. Melissa made us pot roast with beef, carrots, potatoes and celery. It turned out delish. Thanks Melissa!

My Version of an In & Out Burger
This is my version of an In & Out Burger....lettuce wrapped of course. For the secret sauce I used, finely diced onion, sugar, white vinegar, non-soy veganaise, ketchup and pickle relish.

Sweet Potato and Bacon Soup
Sweet Potato and Bacon Soup: Very easy to make. Just cook up some sweet potatoes until soft, blend them with a hand blender and add chicken broth and onions and blend until smooth.
