Avocado and Tomato Toasts

This is a shot of everything we ate on Sunday: Bang Bang Shrimp, Avocado and Tomato Toasts and Strawberry Salsa

Stephanie also made us some deviled eggs!

Avocado and Tomato Toasts: We used gluten-free bread, avocado, mayo, garlic powder, pink sea salt, and heirloom tomatoes.

Bang Bang Shrimp

More Sunday Funday girl day recipes! We recipe tested this Bang Bang shrimp and it was absolutely delicious! We added a little too much sauce because we didn't end up using the whole bag of shrimp, but otherwise it came out amazing.

Strawberry Salsa

On Sunday my friend Stephanie and I had a girls day! We did a lot of recipe testing. This one is our strawberry salsa. We used strawberries, organic strawberry preserve, organic cane sugar, organic cane brown sugar, kiwi, Fuji apples and raspberries. It turned out amazing. Also made our own tortilla chips using cane sugar and cinnamon.

Turkey Meatball and Spaghetti Squash Soup

Turkey Meatball and Spaghetti Squash Soup: This basically tastes just like spaghetti, but it's more of a soup consistency. I used ground turkey, spices, diced tomatoes, basil, chicken broth and tomato juice.

Roasted Beet, Arugula, Avocado and Goat Cheese Sandwich

Roasted Beet, Arugula, Avocado and Goat Cheese Sandwich: When I'm not cooking for my husband, I like to create recipes that he would normally never eat, like this vegetarian sandwich. I couldn't even pay him to eat beets, so I take advantage of this opportunity. For this I used gluten-free bread, spread ghee butter over the top of the bread along with garlic and some shredded cheese. Then I filled it with herbed goat cheese, arugula, avocado and beets. Broiled both sides of the sandwich until golden brown! So yummy!
